Create the matrix sharing the OPCT versions and topologies tested on OCP releases (minor).
The OCP matrix must include the OPCT versions and the OCP supported / tested versions and topologies.
This Matrix could be added on the Prerequisites section and on the README.

Goal
- Create a document with the OCP topologies supported by OPCT
- Make sure we are following the BU goals when creating the topology
- Create the tasks for CI jobs testing on those combinations (may require a Epic)
