In the rhdh-plugin-export-overlays repo, update the relevant catalog entities / documentation files to include the Orchestrator plugins and:

• the correct plugin versions
• BS version alignment
• how to update
• how GH builds happen (if different from the default process in the overlays repo)
• how GL / Konflux builds happen
• who to contact for issues.

Ensure that the documentation is clear, up-to-date, and that all pointers are correct.
