Issue description

Old applications removed from GitHub repo with commit https://github.com/RedHatTraining/DO288-apps/commit/1c71237a99bfd4370d234008b1d61000eaefbcef

However, the exercises for the version 4.10 still rely on these resources to be available.

For example, "Section 1.5: Guided Exercise: Deploying an Application to an OpenShift Cluster" mentions to checkout main and then inspect  the file ubi-echo/Dockerfile. This won't work.

I got the exercises I looked at working by just explicitly referring the last commit before the files were removed (3a9e1a5).

Nevertheless, I would prefer to have properly working descriptions in the RHLS material. Maybe you want to add a specific Git tag for 4.10 and update exercises, labs, etc. to check out this specific tag instead of main?

We soon have an internal course based on RHLS DO288 version 4.10. The course will start on Wednesday 15/05. Would be great if you could solve it until then.
