Issue description
Chapter discusses an outdated logging facility (elasticsearch/fluentd/kibana). Instead we are supposed to discuss LokiStack. Also, with the advent of observability on OCP, we need to include Loki/Tempo discussion as they will be used to cross reference problems captured in tracing/monitoring.
