Issue description

In step 2.3 there is a note that says "the OADP operator has a single available update channel: stable-1.2".  The instructions seem to be written to work with this older version.  There is, however, two different channels available in the environment and the newer 1.3 comes with some updated features (like built in data mover SEE https://docs.openshift.com/container-platform/4.14/backup_and_restore/application_backup_and_restore/release-notes/oadp-release-notes-1-3.html )

If a learner doesn't use the older 1.2.1 then the configuration options given later in the exercise when creating the DPA (step 7) will not be valid.  VSM and dataMover will need to be removed.

Steps to reproduce:

Subscribe to stable-1.3 instead of stable1.2

Workaround:

Modify step 7 DPA to not include the "vsm" velero plugin and remove the spec.features.dataMover if using stable-1.3

Expected result:

Should be more clear that stable-1.2 must be used or update to use stable-1.3.  Probably good to move to stable-1.3 since this is a fast moving feature.
