As part of the Jaeger rebranding to Red Hat distributed tracing, the Operator channel is moving from a numbered release channel (1.17 - stable, 1.20 - stable) to a rolling release (label TBD).  We should document the (upgrade?) process of manually changing the subscription channel, similar to how the Logging team documented the name change for the Elasticsearch Operator in their docs in this PR:
