As part of OSSM-841 and OSSM-840, we've migrated to CPaaS multi-stage builds, which has greatly simplified our build process. We are still hard-coding a lot of version numbers, however.

One solution would be to use git tags, CPaaS offers

Acceptance Criteria:

• no hard-coded version numbers in Dockerfiles anymore
• Update release documentation if necessary
