Fix typos in downstream ModuleID declarations in monitoring.adoc

Remove the characters "], which are incorrectly appended to the ModuleID declaration for the topics Monitoring Debezium on OpenShift, Kafka Connect JMX environment variables, and Kafka JMX environment variables.

These IDs are used to rename topics when they are fetched for reuse in the downstream documentation.

The incorrect IDs result in the creation of a redundant downstream files with names that include the extra characters.
