Update UDI sidecar image to node 16

    • The new Universal Developer Image sidecar includes an update from Node 12 to 16, as Node 12 is EOL.

      Currently the java8/node12 sidecar has node 12 (EOL April 2022).

      Until about a week ago, the latest in RHEC was node 14 (EOL April 2023), so we could consider adding it, or replacing node 12 with that version.

      But the latest supported version in the RHEC is actually node 16, as of today.

      So maybe along with the move to UDI (CRW-2463, CRW-2464) we should update to node 16?

      We could provide MULTIPLE versions of node, or just grab the latest. WDYT?
