Use DATASOURCES env as opposed to DB_SERVICE_PREFIX_MAPPING for configuring datasources

    Description

      DATASOURCES was introduced months ago and provides the ability to configure datasources for any DB, whereas the legacy prefix mapping only supports PostgreSQL and MySQL. We should update all the templates to use the newer mechanism as it provides a better example for users.
