When the console operator was first release as a technology preview, the `alpha` OLM channel name was selected due to the limited support offered for that version in Streams 2.8. It has since become a GA component, but the default OLM channel remains as `alpha`.

We should replace the `alpha` channel with a `stable` channel for release 3.1 and document in the release notes that users should update their subscriptions to use `stable` going forward to receive the latest updates. Customers using the release-specific channels are not impacted and they will continue to be required to change the release channel for each new console version.
