As a WMCO Developer, I want to upgrade containerd to version 2.1.0, or preferably a 2.Y LTS version,  so that we can benefit from improved volume mount stability, image pulling, and overall runtime performance.

Description
Containerd 2+ introduces critical fixes and improvements relevant to Windows container environments, including:

• Resolution of volume mounting regressions affecting HostProcess containers (including issues with SxS DLL loading).

• Better support for sandbox image configuration in Hyper-V isolated containers.

• Performance improvements in image pull and extraction.

• Removal of deprecated features from previous versions.
