While working on https://issues.redhat.com/browse/WFLY-21376 trying to quickly understand the statistics collecting feature I found no documentation.

This is unfortunate, because this won't show up in the model reference (or is not easy to find) as it's scoped to deployment.

Also, it is quite essential to have this section so we can document the drawbacks.
