The sprring-resteasy is an example of a quickstart which has specific JDK version requirements (JDK 16+), i.e can't run on JDK 11. We should add a new input param to the abstract quickstart GH CI workflow, named MATRIX_JDK, which may be used to configure the JDK versions a specific quickstart can be tested (similar to how the MATRIX_OS param allows customization of matrix.os).
