Update versions in pom.xml and doc attributes

I'm aware that the ${SUBJ} will be done shortly in any case, but this is more like a to-do.

These doc attributes can be adjusted in order to reflect up-to-date values, as well as pom.xml files (helloworld as an example)

These attributes/dependencies are only small part of all of them, but the shared doc attributes will impact the command for todo-backend Helm chart deployment, that's why it's pretty important.
