Change the version properties to reflect the big bang

Create legacy.version.xxx properties for use with dep mgmt entries in the boms/legacy-xx boms.

Take the values of the preview.version.xxx props and move them to version.xxx. Drop the preview.version xxx props.

Following this if any cases are found where legacy.version.xxx and version.xxx are the same, investigate.
