Add some kind of 'skip.ee8' profile concept

Following the big-bang we'll have ~ 50 maven modules that compile and test code that never ends up in a server installation. These are the modules that have source-transform variants. There's not much benefit of doing this as the source-transform ones get built and tested.

So create some analogue to the skip.preview profile to disable building of these modules.
