Add org.wildfly.extension.opentelemetry to excluded extensions to fix HostExcludesTestCase

When adding elytron-oidc-client to the EE feature pack for WFLY-15431, we noticed that mvn clean test -Dtest=HostExcludesTestCase -Dtestsuite.default.build.project.prefix=ee was failing because an exclusion for org.wildfly.extension.opentelemetry was missing in domain-host-excludes.xml. This should be added.
