Exclude okhttp and okio from transformation by the Galleon WildFly Plugin

The wildfly-preview FP build is transforming okhhtp and okio but it doesn't need to. It's picking up these artifacts' use of jakarta,annotation package, but that use is JSR 305 annotations, not the Jakarta Annotation api from EE.

So exclude these from transformation.
