Once all legacy security removal is in perform a full documentation refactor

Going to start with Blocker, we can triage lower later.

Once all the legacy security integration is removed from the docs we may need a refactor to ensure it is all Elytron first. Also a double check that no legacy security has been overlooked.

This is scheduled against Beta but may be better between Beta and GA when further large updates should not be expected for the documentation as all features should be merged.
