The docs/examples/enable-microprofile.cli script doesn't add opentracing

The docs/examples/enable-microprofile.cli script has logic to add the MP platform spec subsystems into an arbitrary standalone.xml config. But it doesn't add MP OT.

Formerly it didn't add Config, Health or Metrics either, but logic for those got added when those subsystems were no longer part of the wildfly-ee FP. I think the same should have been done for OT, but we didn't catch that it wasn't done.
