Adapt RHOSDT platform operators description (in the ClusterServiceVersion)

Aligned with the documentation, the RHOSDT platform operators (Jaeger and Tempo) need to:

• Tell explicitly the underlying technology for the specific operator (Jaeger and Tempo)
• Rephrase the docs to mention that it's a flavor of the RHOSDT platform
