Expose additional metrics with increased granularity for backends

The request is to increment granularity of the metrics exposed by the APIcast gateway.

Currently APICAST_EXTENDED_METRICS enables the service_id and service_system_name labels, with this RFE it should be possible to differentiate metrics also based on the APIaaP Backend (rather than just the Product).
