Description

This task is about reintroducing the apicast-operator K8s Service for the operator metrics.

It was previously disabled due to a bug in OLM that has since been fixed.

Notice how in the case of apicast-operator we are only reenabling the Service and NOT the ServiceMonitor. This is intentional and the objective of this issue. The reason of not reintroducing the ServiceMonitor is due to apicast-operator is compatible with K8s and ServiceMonitors are not included out of the box there.
