Based on the code the option available to set the *APICAST_EXTENDED_METRICS* via the operator.
If the APIManger is already deployed and it the customer would want to enable the above metric via the APIManager configuration, how do they do it?

When testing I noticed that, just adding the configuration does not redeploy APICast with *APICAST_EXTENDED_METRICS*, I had to delete both the pod and DC to make it work.

Could you please provide the recommended way to set the above environment variable via the Operator ?
