Summary

Upgrade the CSV and bundle manifest to the `stable` release, so it passes the right message to customers installing the supported ecosystem.

Goals

Change the bundle and CSV manifest to reflect this change.

Success Metrics

• The bundle image is generated correctly, and we can install it on an OpenShift cluster via the `stable` channel.
• The operator can be installed in a cluster with an already installed operator on the `alpha` channel. User must change the channel manually to `stable`.

Motivation

Users can now see that the operator is supported.
