As a user I need info on how to debug knative services.

We want to cover details such as:

• Explain how to debug requests end-to-end either with Kourier or Istio, including how to get more info at the ingress gateway. For example in order to setup logging in Kourier you may have to create an observability cm. Also we a new feature coming that allows to change kourier configuration for debugging reasons that could be helpful
• Setting up logging and profiling for services.
