Provide version based channels for openshift-pipeline-operator

We would love to have a way to update the openshift-pipelines operator automatically while staying in the same 1.x release. Therefore we would love to have additional operator update channels besides the current two (preview and stable)

e.g. stable-1.5, stable-1.6
