Ensure we can drop or not JDK 8 based Product nigthly pipeline.

Currently with upgrade of main/7.67.x-blue branches with PR to fix snappy-java transitive dependency management by upgrade of strimzi and Spring versions.

this job [1] fails on Spring tests due Strimzi functional tests not compiled into java 8 bytecode.

The partial fix was done in https://github.com/kiegroup/droolsjbpm-build-bootstrap/pull/2514 but this caused that below test failures, but at least fixed the error for build caused by https://github.com/kiegroup/droolsjbpm-build-bootstrap/pull/2445
