Description of problem:

In the self-managed, disconnected install guide (https://access.redhat.com/documentation/en-us/red_hat_openshift_data_science_self-managed/1.27/html/installing_openshift_data_science_self-managed_in_a_disconnected_environment/mirroring-images-to-a-private-registry-for-a-disconnected-installation_install) for RHODS 1.27 (and earlier) ... the sample YAML provided in step 4 contains the line: 

catalog: registry.redhat.io/redhat/redhat-operator-index:v4.12

This is accurate if you are deploying on OpenShift 4.12, but not if you plan on deploying on OpenShift 4.13. 

We should make this more easy to use.
