Description of problem:

After the implementation of RHODS-3559 we now have version selectors in both the Jupyter tile as well as Workbench creation dropdown.
However, currently, the name of the images and their versions are IMHO unpleasant from a UX perspective

My suggestion would be to drop the version tag from the "title" image name in the Jupyter tile (same as the image selection dropdown in Workbenches or as RHODS 1.24), and to rename all versions to something more clear and human-readable than a version tag, which is currently of the from `py3.y(-cuda11.y)-vX` in all cases

Steps to Reproduce

1. Go to Jupyter tile
2. Expand `Versions` section of each image
3. Go to DS Projects
4. Access/Create Project
5. Create new Workbench and select one of the OOTB images

Actual results:

Version names are simply the image tags being used in the backend. Additionall, the Jupyter tile appends the currently selected version/tag to the image title

Expected results:

Clean image title (no version appended) and better version names
