For some reason, the E2E GRPC tests are all failing on OpenShift. As a consequence, they are were disabled in #39 (example, here).

The root cause should be investigated and fixed. There is the chance that is related to opendatahub-io/odh-model-controller#59, or some environment setup is missing/bad.

As part of the fix, the relevant skip annotations introduced in #39 should be reverted, and the tests should be added in openshift-ci.
