fix broken helm chart publishing (mikefarah yq install)

      Since 12 Jun 2025, 07:24, the konflux builds have been failing to push new helm charts, so https://quay.io/repository/rhdh/chart?tab=tags&tag=latest has an 8 day old 1.7-79-CI chart.

      Culprit is likely some work I did with Joseph to make mikefarah yq install more mac-friendly in RHIDP-7827.
