EPIC Goal

What are we trying to solve here?

Our dependency on the upstream Backstage chart makes it difficult to handle some changes like adding opt-out Lightspeed sidecars to the Backstage Deployment (because the only way we can change the upstream template rendering is via the values file, and we cannot put conditions in values files as Helm expects them to be valid YAML files).

The goal of this Epic is to give us greater control over such templates, while still being able to contribute changes upstream if needed.
