[rhdh-operator] Remove EOL 1.7 from the nightly tests and disable it in the Renovate config

    • RHDH Install 3288

      1.7 is now EOL with the release of 1.9.0. We should remove it from the Renovate config and from the nightly checks in the rhdh-operator repo.
