Now that Gitlab has been declared GA supported, the plugin metadata in the overlays repo
still shows up as Tech Preview.

Fix:
1. Update the values in the overlays to "production" and cherrypick to release-1.9
2. In the docs repo ,

• In main, run ./rhdh-supported-plugins.sh -b main. Discard any irrelevant adoc updates
• In release-1.9, run ./rhdh-supported-plugins.sh -b release-1.9. Discard any irrelevant adoc updates
