In the overlay repository, plugin maintainers wants to provide documentation links like [1] while we want have release specific links in the product like [2].
This change could happen for example in the midstream sync to GitLab so that no manual changes are required when a new release (branch) is created.

This is a follow-up on https://github.com/redhat-developer/rhdh-plugin-export-overlays/pull/1813 and https://github.com/redhat-developer/rhdh-plugin-export-overlays/pull/1867
Acceptance Criteria
- The midstream catalog index includes versioned documentation links for catalog entities from the overlay repository that points to the latest documentation.
