Task

Currently the installer at https://github.com/redhat-ai-dev/ai-rhdh-installer/blob/main/chart/values.yaml#L27 is using RHDH 1.6

We will need to update this repo frequently moving foward to be up to date with newer RHDH releases. 

Since a fast version wont be available until a new RHDH release GA, we should move to fast-1.8 with this task.

Background

Move to RHDH 1.8 and verify installer works by testing out with our Software Templates in https://github.com/redhat-ai-dev/ai-lab-template
