Task

As an engineer working on RHDH, I want to make sure that our RHDH AI Rolling Demo is using the latest updates of the rhdh-chart so that security and all features are ensured.

Background

Currently the gitops env of the rolling demo is based on the rhdh chart (https://github.com/redhat-developer/rhdh-chart) and we are in a bit older version of it.

I've tried in the past to update it ad-hoc but there are a few breaking changes, thus I feel is important to have a dedicated issue and we can dive in the required changes
