To make sure that images referenced in the Compose file for spinning up RHDH locally with Lightspeed are stable, we need to update the tags to avoid 'latest', 'next' or any other non-stable and ever-changing tag.

As part of this, if it is necessary to create our own mirror of an image (e.g. ollama) to ensure stability, we should do so and store it in quay.io/redhat-ai-dev
