Update Rolling Demo features to latest version

      Task Description (Required)

      As we are getting close to feature freeze we should make sure that the rolling demo has up-to-date features. More specifically we should make sure the following is up-to-date:

      • AI Software Templates: All new functionality should be added by RHDHPAI-1117 but we need to make sure that the Templates are compatible with RHDH 1.8.
      • Lightspeed
      • Model Catalog Bridge
      • AI-Experience
      • AI-Homepage
      • Customized Sign In Page
      • Backstage MCP Server Plugin
      • RHDH: Move to 1.8

      Acceptance Criteria

      • All above features are on their latest version and run without an issue on RHDH 1.8
