Preconditions

• CentOS7 host registered & subscribed to Satellite
• Satellite 6.14 or higher
• convert2rhel 1.5.0

Steps to reproduce

• Run convert2rhel analyze -y
• Go to Monitor > Audits and search for audit logs: host=centos7.example.com
• See that the operating system has been removed from the host

Notes

The OS is removed during the Convert: Subscription Manager - Disable all repositories task [0].

From the code I see it runs this command [1]:

subscription-manager repos --disable="*"

Running that command itself without convert2rhel doesn't remove the OS from Satellite.
