Goal: 

Currently in the instructlab-knowledge notebook only one docling conversion pipeline can be set. The goal of this story is to allow users to convert multiple documents using different conversion pipelines for each.

Acceptance Criteria:

A list of verification conditions, successful functional tests, or expected outcomes in order to declare this story/task successfully completed.

• A data structure that can hold docling conversion pipelines in it, to store states over the contribution
• Addition/example to the instructlab-knowledge notebook or a conversion notebook that has multiple documents being converted by multiple different docling conversion pipelines.
