After merging https://gitlab.com/redhat/rhel-ai/rhelai/pipeline/-/merge_requests/688, we found the wheels fail to build due to this error:

ERROR vllm: ERROR: No version matched vllm[cuda]==0.8.4 with constraint vllm==0.8.5

This ticket tracks the work to resolve this issue so that we can build wheel collections from main again.
