Provide a means to override the instructlab image in RHEL AI's ilab wrapper script

      Feature Overview (mandatory - Complete while in New status)
      An elevator pitch (value statement) that describes the Feature in a clear, concise way. ie: Executive Summary of the user goal or problem that is being solved, why does this matter to the user? The “What & Why”... 
      As an advanced user of RHEL AI, performing SDG, training, or other tasks with the instructlab image and CLI wrapper, I would like to be able to override the image used in the wrapper in an easy way.

      In cases where there is a bug in a component and I can build an image that fixes the bug, or where I want to test out a tweak to some behavior, the hard-coded image tag in /usr/bin/ilab prevents me from doing these changes except ephemerally by running sudo bootc usroverlay and editing the script directly.

      Power users, developers, and those working with support and/or engineering to fix bugs would benefit from this feature. The main difference is reduced complexity in using an alternative instructlab image, as even if those alternative images are unsupported, it is a useful interaction to be able to make.

      A list of specific needs, capabilities, or objectives that a Feature must deliver to satisfy the Feature. Some requirements will be flagged as MVP. If an MVP gets shifted, the Feature shifts. If a non MVP requirement slips, it does not shift the feature.
