Can Valkey be rebased to 8?  EPEL 8 and 9 have had Valkey 8 for quite some time and going from Valkey 8 on those systems back to valkey 7.2 is less than ideal.

Further, Valkey 8 has no breaking changes from 7.2 while having many optimizations and improvements under the hood.

I'm happy to submit a PR for this if you give me the go-ahead.
