      java-21-openjdk is the only JDK in RHEL/CentOS 10 and so it should be the default. Flipping this on should resolve many of the dependencies that are pulling in java-17-openjdk, the current default: https://tiny.distro.builders/view-srpm--view-c10s--java-17-openjdk.html
