Goal

Many applications log to stderr rather than stdout by default. It is very cumbersome to adapt arbitrary apps to change to log to stdout. Customer don't want all the log messages going to journal as "error" level, and prefer "info".   

Business requirement 

Either the ability to customize via a flag to Podman on the systemd priority for log messages going to stderr when running via Quadlet, or a "better" default which isn't "error" level.
