As a Business User using the DMN tooling I would like to be able to choose an input value from a "drop-down" list when editing/creating a Decision Table.

Given an Emunmerated Data Type defined in the model when referencing it in a Decision Table as a condition input column would be useful the editor shows a drop-down when entering the input for that input cell.
