Regular maintenance work for updating all AI related resources for each release.
Ensure all the AI related resources are up-to-date.

Requirements (aka. Acceptance Criteria):

The following AI related resources are updated before releasing a newer version of AI plugin and resources in RHDH:

1. Update the models used by the AI software templates
2. Update to the latest existing plugins and templates in the rolling demo environment
3. Add the plugins and templates to the rolling demo environment
4. Update Lightspeed plugin dependencies like Llama Stack, LCS, RAG, Safety Shield, etc
5. Update to the documentation used by the Lightspeed plugin for RAG to the latest 1.10 version of documentation
6. Move the installer to based on the latest version of RHDH

Out of Scope (Optional)

The development of the new AI resources, e.g. AI plugins and templates, are not part of this feature and should be developed in the individual feature.
